This soup is my variation of the traditional Welsh soup served for the Christmas Holidays.

Recipe Ingredients for Mushroom Leek Soup

2 Leeks
2 oz Dried Mushrooms
1/2 cup Butter (Salted)
1 pt Whipping Cream
1/4 tsp White Pepper
6 cups Chicken Stock
2 tbsp Cornstarch
1 cup Cold Water
1 Salt and Pepper

Recipe Directions for Mushroom Leek Soup

  1. Place the dried mushrooms in a bowl of boiling water (Approx. 5 minutes). When soft,

  2. remove carefully not to lose any of the water. Chop the mushrooms in small pieces.

  3. Slice the roots off the Leeks and cut from the base in thin slices until the centers are

  4. Medium Green. Discard the remainder.

  5. Melt butter in a large sauté pan. Add the leeks and sauté until they are soft and

  6. translucent. Add the mushrooms, Mushroom broth, and chicken stock and bring to a mild

  7. boil.

  8. Simmer the broth mixture for 20 minutes and strain the broth into another pot or bowl.

  9. Add the leeks and mushrooms to a blender along with about one cup of the broth, cover,

  10. and blend until the mixture is smooth. Return the mixture to the broth and mix.

  11. Put the broth back on the burner and bring to a boil. Add the White pepper, salt and black

  12. pepper to taste. Add whipping cream being careful not to bring to a boil.

  13. Mix the Corn Starch in the cup of water, making certain it is not lumpy. Add the starchy

  14. water to the soup and turn up the heat, stirring constantly until the soup begins a mild

  15. boil. Turn off the heat, remove the pan from the burner and serve.
