Recipe Ingredients for Mushroom Leek Soup

1 large leek
1 lb mushrooms
3 tbsp butter
1/2 cup white wine
4 cups Vegetable broth
1 cup water

Recipe Directions for Mushroom Leek Soup

  1. Cut leek into quarters and slice into 1/2 inch pieces

  2. Slice mushrooms

  3. Melt butter in large pot

  4. Add leeks and mushrooms

  5. Cook until softened

  6. Add vegetable broth, white wine, and water. Pepper to taste.

  7. Simmer for 30 minutes. Add to blender in batches. Blend roughly.
