Recipe Ingredients for Mushroom & Leek Risotto

1 medium raw(110 g) Onion Red
120 grams Leeks
120 grams Mushrooms
1 serving Garlic Cloves
160 grams Risotto Rice Arborio Grain
9 3/5 grams Vegetable Stock Cubes
600 grams Water
25 grams Parmesan, Grated Cheese

Recipe Directions for Mushroom & Leek Risotto

  1. heat oil & cook garlic 1 minute

  2. add seasoning, leeks & mushrooms cook 10 mins

  3. remove & set aside

  4. add onions & cook until soft

  5. add rice & stir

  6. start to add stock approx 1 ladle at a time stir continuously - continue adding until all absorbed (about 20-25 mins)

  7. stir in hald parmesan, lemon, mushrooms & leeks

  8. serve with remainder of parmesan
