I usually add parsley and garlic to the cheese mixture. Great for most vegetarians. I'm still trying to perfect it without adding to the calories...

Recipe Ingredients for Mushroom Lasagna

1 1/2 lb lasagna noodles
1 1/2 lb mushrooms
16 oz ricotta cheese, part skim
1 cup parmesean cheese
1 cup mozzarella cheese

Recipe Directions for Mushroom Lasagna

  1. Boil lasagna noodles until just barely al dente.

  2. Mix ricotta cheese (either part-skim or fat-free) with parmesan cheese and any herbs/garlic desired.

  3. Slice mushrooms. You can use whatever is available at your grocery.

  4. In casserole dish, begin with noodles, then mushrooms, then cheese mix. Continue to layer until dish is full.

  5. Top with mozzarella cheese, shredded.

  6. Bake at 350F until cheese on top is bubbly and turning golden brown.
