Recipe Ingredients for Mushroom & Herb Pilaf

1 1/2 cups sliced fresh mushrooms
1/4 cup finely chopped onion
1/4 cup finely chopped celery
1/2 teaspoon dried thyme
2 tablespoons light butter
3 cups cooked brown rice
1/8 teaspoon salt

Recipe Directions for Mushroom & Herb Pilaf

  1. Coat a large nonstick skillet with nonstick cooking spray and add the mushrooms, onion, celery, and thyme. Place the skillet over medium-high heat, cover, and cook, stirring frequently, for several minutes or until the vegetables are tender. Add a little water or broth if the skillet becomes to dry.

  2. Reduce the heat to medium, add the olive oil, and stir until it melts. Add the grain and salt to the skillet mixture and cook and stir for a minute or two or until the mixture is heated through. Serve hot.
