Mushroom & Ham Cannelloni topped w/ tomato sauce and Laughing Cow cheese!

Recipe Ingredients for Mushroom & Ham Cannelloni

300 g spaghetti, cannelloni tubes (about 12)
230 g mushrooms, sliced
5 slices turkey ham
2 onions
1 tomato
4 tbsp ketchup
1 tbsp olive oil
6 wedges laughing cow original swiss cheese
6 tbsp grated parmesan
1 1/4 tsp ground cumin
1/2 tsp salt

Recipe Directions for Mushroom & Ham Cannelloni

  1. In a saucepan, heat the olive oil.

  2. Add mushrooms and 1 onion cut into half rings.

  3. Cut ham into smal pieces and add to pan.

  4. Add spices and two Laughing Cow wedges. Mix well, cook until cheese has melted and remove from heat.

  5. Fill each cannelloni tube with mixture and set in a deep baking pan.

  6. Preheat oven at 190 C.

  7. After filling the tubes, leave any remaining mixturein the pan.

  8. IN a food processor add tomato, remaining onion and ketchup and mix into a puree.

  9. Add to the pan and cook for 5 minutes.

  10. Spoon sauce over tubes so that they are all covered.

  11. Cut remaining 4 LC cheese wedges into slices and place over cannelloni.

  12. Cook for 35 minutes.
