From the Veganomicon. I ate this at Thanksgiving instead of turkey gravy - popular with omnivores as well!

Recipe Ingredients for Mushroom gravy

4 oz. cremini mushrooms, minced
1/2 red onion, in thin slices
2 tbsp olive oil
1/4 cup flour
2 cups vegetable broth
1 tsp thyme
1 tsp sage
1/2 tsp salt

Recipe Directions for Mushroom gravy

  1. 1. Heat oil in pan and saute onions lightly.

  2. 2. Add mushrooms and saute until everything is tender.

  3. 3. Add flour to vegetable broth and whisk until smooth.

  4. 4. Add flour mixture to mushrooms and onions.

  5. 5. Heat until boiling, then simmer for a minute until gravy thickens.

  6. 6. Strain as many of the mushrooms and vegetables out of the gravy as desired - I removed about 3/4 of the vegetables before serving.
