Safeway has this at their gourmet deli's. This is so much more inexpensive. You can make it look store bought by adding red peppers or pimentos. Italian cuisine.

Recipe Ingredients for Mushroom Garlic Marinated Salad

2 pounds fresh mushrooms
1/4 cup lemon juice
1/2 cup cider vinegar
1/4 cup water
2 tablespoons finely chopped onion
1 tablespoons minced garlic
1 tablespoon chopped fresh parsley
1/2 teaspoon salt
1/8 teaspoon pepper
1/8 teaspoon dried oregano

Recipe Directions for Mushroom Garlic Marinated Salad

  1. Cover mushrooms with water in a large Dutch oven; add lemon juice, stirring well.

  2. Bring to a boil; reduce heat, and simmer 1 minute; drain.

  3. Combine vinegar and remaining ingredients, stirring well; pour marinade over mushrooms, and toss lightly.

  4. Place mushroom mixture in a shallow container; cover and refrigerate 24 hours.
