Recipe Ingredients for Mushroom Fricasse

13 oz. mushrooms, sliced
1/4 cup shallots, finely chopped
2 T. butter
1 T. olive oil
2 T. parsley, chopped
1 tsp. chives, snipped
1 clove garlic, minced

Recipe Directions for Mushroom Fricasse

Heat olive oil and half the butter. Saute garlic for a few seconds until fragrant. Add shallots and cook for 2 minutes. Add mushrooms, season with salt and pepper. Saute for 5 minutes. Add rest of butter. Serve very hot over toasted English muffins or sliced polenta.
