Easy vegetarian option to baked enchiladas

Recipe Ingredients for Mushroom Enchiladas

1 large tortilla (or 2 small - 180 calories max)
1/2 cup mushrooms, diced
1/4 cup medium tomato, diced
1/8 cup green pepper, diced
1/8 cup onion, diced
2 tbsp light cream cheese
1/4 cup 4-cheese mozzarella blend, shredded
1/2 cup salsa

Recipe Directions for Mushroom Enchiladas

  1. saute mushrooms, peppers and onions until soft.

  2. spread tortilla shell(s) with cream cheese.

  3. fill with cooked ingredients.

  4. top with tomato.

  5. roll up enchilada and place in baking dish. (line additional wraps side-by-side)

  6. sprinkle top with cheese.

  7. bake @ 400 degrees until crispy on outside and cheese is melted.

  8. serve with salsa.
