Recipe Ingredients for mushroom and egg white fritatta

23 tablespoons egg whites
20 oz. fresh mushrooms
1/3 cup Parmesan cheese
1/4 cup pesto sauce
2 tablespoons of olive oil

Recipe Directions for mushroom and egg white fritatta

  1. Sautee mushrooms in 12 in. skillet

  2. Remove mushrooms, place in mixing bowl

  3. Mix egg whites and pesto sauce with mushrooms

  4. Pour mixture into skillet, cover, and let set for 10-15 minutes. Center will still be a little soft.

  5. Top with Parmesan cheese, and set under broiler for 1-2 minutes

  6. Cover refrigerator rack with newspaper, and put skillet inside refrigerator to set

  7. The next morning, remove fritatta with knife and rubber scraper and put on a plate.

  8. Cover with plastic wrap
