Egg with shiitake mushrooms on whole wheat english muffin

Recipe Ingredients for Mushroom and egg muffin

1/2 oz shiitake mushrooms
1 whole egg
1 whole wheat english muffin
1/2 teaspoon parmesan cheese
1 pinch black pepper
1 pinch salt

Recipe Directions for Mushroom and egg muffin

  1. coat pan with non stick cooking spray

  2. sautee mushrooms in small non stick pan for 3 to 5 minutes or till tender add salt and black pepper

  3. remove mushrooms

  4. add a bit more spray to pan

  5. fry egg over easy or firmer to taste

  6. sprinkle egg with black pepper, salt and parmesan cheese

  7. toast english muffin while egg is frying

  8. combine egg and mushrooms on muffin in a sandwich.
