A low calorie and quick very filling meal

Recipe Ingredients for Mushroom delight

250 g Mushrooms
85 g Red Onion
100 g Red Bell Pepper
70 g Spinach
75 g cherry tomatoes
70 g corn
1 pinch of dried basil
36 g Low Fat, Cheddar Or Colby Cheese
25 g Bread, Whole-wheat, Commercially Prepared, Toasted

Recipe Directions for Mushroom delight

  1. Add mushrooms ( I prefer Chestnut but regular ones will do) red onion and bell pepper (red will give it a great splash of colour).

  2. Just before the mushrooms reach desired tenderness, add the spinach, tomatoes, corn and the dried basil (I use 1/2 tsp Season All) and cook for about one more minute - just long enough to coat and warm the tomatoes

  3. Place toast on the plate (for the calories stated above I get 2 slices of weight watchers danish brown)

  4. Pour the stir fry over toast and sprinkle cheese (I use weight watchers low fat cheese) over stir fry and enjoy!
