Recipe Ingredients for Mushroom Curry with Peas and Potato

2 tbsp vegetable oil
3 cloves garlic, crushed
1 tsp root ginger, grated
6 spring onions, sliced
1 tbsp curry powder
1/2 tsp mustard seeds
8 oz flat mushrooms, sliced
12 oz potatoes, cubed
1 tsp salt
1 tsp garam masala
150 g Blue Dragon Light Coconut Milk
4 oz peas, frozen
1 tbsp lemon juice
1 tbsp fresh coriander, chopped

Recipe Directions for Mushroom Curry with Peas and Potato

  1. Heat the oil in a heavy-based saucepan. Add the garlic, ginger and spring onions and fry over a gentle heat, stirring occasionally, for 2 minutes or until softened.

  2. Stir in the curry powder and mustard seeds. Cook for about 1 minute, then add the mushrooms, potato and salt. Stir to combine, then cover and cook gently for a further 5 minutes, stirring occasionally.

  3. Add garam masala, coconut milk and peas. Cook the curry uncovered for a further 4-5 minutes.

  4. Stir in the lemon juice, taste and adjust seasoning if neccessary, and serve at once garnished with fresh coriander.
