Recipe Ingredients for Mushroom couscous salad

227 grams Mushrooms, Portabella
1 cup, sliced Squash, Summer, Zucchini, Includes Skin
1/4 cup, chopped Onions
3/4 cup, grape Tomatoes, Red, Ripe []
1 tbsp Olive Oil
0.67 cup(170 g) Roasted Red Peppers
0.67 cup Couscous, Dry
0.67 cup (8 fl oz) Water
1 tbsp Vinegar balsamic

Recipe Directions for Mushroom couscous salad

  1. Slice mushrooms and saute in a pan until cooked.

  2. Remove mushrooms from the pan and add chopped the oil and onions. Cook until caramelized.

  3. Cut the grape tomatoes in half and spread skin side down on a cooking sheet. Place under a broiler.

  4. Fry the zucchini.

  5. Add couscous to boiling water.

  6. When the coucous, zucchini, and tomatoes are done, mix all the ingredients and add 1 tsp balsamic vinegar.
