Recipe Ingredients for Mushroom -Clam Chowder

332 1/2 grams clams
8 mushrooms
12 1/2 grams basil, fresh
2 celery stalks
3 c water
1/2 tsp white pepper
3 oz heavy cream

Recipe Directions for Mushroom -Clam Chowder

  1. Steam the clams, clean and reserve liquid.

  2. Boil 3 cups of water, add celery, basil and halved mushrooms. Reduce by half.

  3. Add clam liquid (strained to remove any residual sand) and reduce again.

  4. Remove vegetables, separate mushrooms and discard the rest.

  5. Puree the mushrooms and add back into liquid.

  6. Chop the clams and add to mushroom soup.

  7. Season to taste with white pepper and finish with heavy cream.

  8. Stir lightly to blend and serve.
