Recipe Ingredients for Mushroom and Chicken Tom Yum

1 cup, chopped or diced Chicken, Breast, Meat Only
1 cup, pieces or slices Mushrooms
1 cup cherry tomatoes Tomatoes, Red, Ripe
4 cup Soup, stock, chicken, home-prepared
3 lime yields Lime Juice
1 cup, chopped Broccoli
30 grams Fish Sauce
0.33 tbsp Tomato Paste

Recipe Directions for Mushroom and Chicken Tom Yum

  1. Place the chicken stock, mushrooms, tomatoes, lime zest, fish sauce, in a medium pot. Simmer for 5 mins.

  2. Just before serving add very thinly sliced chicken. Simmer until it just turns white and is cooked through(about 1 min)

  3. Mix in lime juice and adjust seasoning

  4. Serve in deep bowels over cooked broccoli and scatter over corriander or mint leaves.

  5. To add more juice to dish cook noodles and serve over these.
