Recipe Ingredients for mushroom chicken risotto

1 c arborio rice
1 T olive oil
2 c low-sodium chicken broth
3/4 c dry white wine
1/2 lbs chicken breast
2 c mushrooms
1/3 c parmesan cheese

Recipe Directions for mushroom chicken risotto

  1. saute rice in olive oil for about 1 minute. Add wine and cook off alcohol. Add broth bit by bit, adding in as it is absorbed.

  2. Cut up chicken into bite-sized pieces and saute in separate pan. Alternately, use precooked leftover chicken. When chicken is mostly cooked, add in mushrooms and a bit of the broth. Simmer until the mushrooms are tender.

  3. Mix chicken and mushrooms together with the risotto and serve.
