Recipe Ingredients for Mushroom Chicken

0.12 cup Organic Spelt Flour
750 grams Chicken, Breast, Meat Only
8.466 oz Beef 99% Fat Free Broth Rtsb
4 cup, pieces or slices Mushrooms
1 medium (2-1/2" dia) Onions
3 clove Garlic
0.25 cup Olive Oil
150 grams Mozzarella, Part Skim Milk Cheese

Recipe Directions for Mushroom Chicken

  1. Put the chicken breasts, cut in half in a oven dish and season with salt and pepper, rub with some olive oil and put in the oven at 180 celsius for 20 minutes.

  2. Saute the onion and garlic in a frying pan with some olive oil.

  3. Add mushrooms and season with salt and pepper. When they have browned up a bit, add the beef stock and stir.

  4. Let simmer for a few minutes, add the spelt flour to thicken(optional)

  5. Take the chicken out of the oven and pour the mushrooms over it.

  6. Bake in the oven for a further 35 minutes.

  7. Sprinkle the cheese on top of the dish and put back in the oven for 5 minutes on the grill setting (240 C).
