Recipe Ingredients for Mushroom, chestnut and pumpkin pilaf

200 grams Chestnuts
1 tbsp Sesame Seeds
150 grams Squash, Winter, Butternut
1 cups Wild Rice, Cooked
1 tbsp Soy Sauce
1 oz Sake Wine (16% alcohol)
1 1/2 cups Chicken Stock
6 mushrooms Mushrooms, Shiitake

Recipe Directions for Mushroom, chestnut and pumpkin pilaf

  1. Put the rice, pumpkin, chestnuts, soy sauce and mirin in a small casserole with a lid, lay the mushrooms on the surface stalk-side down.

  2. Pour the chicken stock over the rice to cover it by about 1/2 cm, bring to a simmer, cover and cook for 15 minutes or until the rice is tender.

  3. Sprinkle with sesame seeds before serving.
