Recipe Ingredients for Mushroom Casserole Recipe

1 lb brown mushrooms
1 onion
3 cloves garlic
2 large eggs
1 cup 2% cottage cheese
1/2 cup fat free sour cream
1/2 teaspoon salt
1/3 cup grated parmesan cheese
2 tbsp extra virgin olive oil
3 cups brown rice

Recipe Directions for Mushroom Casserole Recipe

  1. preheat oven to 350 degrees

  2. sautee mushrooms in olive oil until liquids released add onions and cook for 4 to 5 minutes, stir in garlic and cook for 1 minute and remove from heat

  3. add rice to the skillet and stir until combined

  4. whisk together eggs, cottage cheese, sour cream and salt

  5. combine rice mixture and cottage cheese mixture and stir until combined, pour into baking dish (grease ahead of time), sprinkle with parmesan cheese and cover with foil

  6. cook for 30 minutes

  7. remove foil and bake for 20-30 minutes until hot throughout and golden

  8. sprinkle with remaining parmesan
