A variant of Spaghetti Carbonara for vegetarians!

Recipe Ingredients for Mushroom Carbonara

3.1 large Egg, Whole
300 grams Spaghetti
300 grams Mushrooms
160 grams Onions
1 tbsp Sunflower, Linoleic, (Hydrogenated) Oil
3 tbsp Parmesan, Grated Cheese

Recipe Directions for Mushroom Carbonara

  1. Cook spaghetti in a large saucepan of salted boiling water, following packet directions, until al dente.

  2. Meanwhile, heat oil in a large frying pan over medium-high heat. Add onion and fry for 3 minutes or until soft. Add mushrooms and cook for 2 minutes or until mushrooms are tender.

  3. Drain spaghetti and return to saucepan. Whisk eggs in a small bowl with a fork. Add eggs, mushroom mixture, parmesan and salt and pepper to spaghetti and toss until well combined. Place saucepan over medium heat and stir until until egg mixture has just set.

  4. Serve immediately.
