This is a modified version of mushroom cakes - no sour cream, less cheese, egg beaters and no vegetable oil for sauteing.

Recipe Ingredients for Mushroom Cakes

1 tbl Smart Balance
2 1/2 lbs mushrooms, thinly sliced
2 cloves garlic
1 onion chopped
1/8 tsp rosemary
1/8 tsp black pepper
1/2 c celery
1/2 c green bell pepper, chopped
1/2 c carrots, finely shredded
1/4 c lemon juice
1/4 c egg Beaters
2 slices whole wheat bread (dried and crumbled)
4 ozs provolone cheese

Recipe Directions for Mushroom Cakes

  1. Melt Smart Balance and saute mushrooms, garlic, onions and spices until brown.

  2. Add celery, peppers, carrots and lemon juice.

  3. Simmer for 5 minutes

  4. Cool to room temperature.

  5. Add Egg Beaters, bread crumbs, and grated cheese.

  6. Mix well and regrigerate for 1 to 2 hours.

  7. Scoop mixture directly on oiled griddle (use Pam)

  8. Flatten to form a pattie. Cook both sides for 4 minutes until well browned.

  9. Place neatly into serving pans.

  10. Garnish with sauteed mushrooms or cover with mushroom gravy.
