Beet soup with cabbage, wild mushrooms.

Recipe Ingredients for Mushroom, Cabbage Borscht

1 tbsp olive oil
4 cups beets
1 tsp olive oil
2 carrots
1 onion
3/4 cup dill
3/4 head cabbage
3/4 leek
2 cups mushrooms
4 servings chicken broth
6 cups water
3 tsp salt
2 tsp pepper
3 tsp balsamic vinegar

Recipe Directions for Mushroom, Cabbage Borscht

  1. Bake beets.

  2. Saute onions, carrots.

  3. Add cabbage

  4. Add mushrooms, leeks, dill, broth, water, pepper and balsamic vinegar.

  5. Serve with 2 tbsp of yogurt and additional dill
