Recipe Ingredients for Mushroom Broccoli Quisotto

2 tbsp (30 ml) butter
2 cups (500 ml) broccoli, chopped
2 cups (500 ml) white button mushrooms, chopped
1/2 cup (125 ml) white onion, diced
1 tbsp (15 ml) garlic, fresh, minced
1 cup (250 ml) quinoa
2 cups (500 ml) chicken stock
1 pinch ground nutmeg
1/4 cup (60 ml) fresh parsley, chopped
1/3 cup (80 ml) parmesan cheese, grated

Recipe Directions for Mushroom Broccoli Quisotto

  1. Melt the butter in a large saucepan. Saute the broccoli, mushrooms, onion and garlic until tender, about 10 minutes, stirring frequently.

  2. Combine the quinoa, stock and nutmeg in a medium saucepan and bring to a boil. Reduce to a simmer, cover and cook until quinoa is completely tender, about 10 minutes. Turn off the heat and leave the covered saucepan on the burner for 6 minutes to allow residual heat in pot to complete the cooking.

  3. Add the cooked quinoa to the broccoli and mushrooms. Gently stir in the parsley, parmesan cheese. Salt and pepper to taste. Serve immediately.
