Rich mushroom soup without butter or cream

Recipe Ingredients for Mushroom Bisque

4.25 oz shitake mushrooms
8 tbsp Extra Virgin Olive Oil
1 medium (2-1/2" dia) Onions
0.75 cup chopped Leeks
1 stalk, medium (7-1/2" - 8" long) Celery
5 clove Garlic
3.5 oz Sourdough Loaf
1 tablespoon Sage
316 tablespoon Thyme
6 cup Soup, Chicken Broth

Recipe Directions for Mushroom Bisque

Cut vegatables. Saute vegatables in olive oil until soft Add chicken stock and simmer for 20 minutes. Add bread and herbs, simmer 4 minutes longer. In small batches run through blender until smooth. Romove to a pot, heat and serve.
