Recipe Ingredients for Mushroom Barley Soup

0.75 cup Barley, Pearled
2 medium (2-1/2" dia) Onions
2 stalk, medium (7-1/2" - 8" long) Celery
1 tbsp Olive Oil
24 oz Mushrooms
2 cup, chopped Carrots
4 cup Organic Vegetable Broth
2 cup Creamy Portobello Mushroom Soup
1 tbsp Tomato Paste
0.5 tsp Salt, Table
0.25 tsp Pepper, Black
3 tbsp Parsley

Recipe Directions for Mushroom Barley Soup

  1. In a medium sauce pan, bring the water and barley to a boil. Reduce heat, cover and simmer for 30 minutes---you only want to partially cook it. Use a fine mesh strainer to drain it.

  2. In a large soup pot, heat the olive oil and cook the onions and celery for about 7 minutes.

  3. Add the mushrooms. That may seem like a lot, but remember, mushrooms always cook down quite a bit. Stirring often, cook the mushrooms for about 5-10 minutes.

  4. Stir in the carrots, tomato paste, broth, and partially cooked barley.

  5. Bring to a boil, then reduce heat, and cover. Let it simmer for about 30 minutes, stirring occasionally. Stir in the salt, and pepper.

  6. Sprinkle with parsley and serve. Enjoy!
