Mushroom Soup with Barley & Turkey Bacon (can sub pancetta)

Recipe Ingredients for Mushroom & Barley Soup

16 oz Mushrooms
2 tbsp Omega-3 with Extra Virgin Olive Oil Light Buttery Spread
0.13 cup Whole Wheat Flour
6 serving Turkey Bacon
1 large Onions
2 medium Carrots
2 stalk, large (11"-12" long) Celery
3 clove Garlic
6 cup Natural Goodness Chicken Broth
0.5 cup Pearled Barley

Recipe Directions for Mushroom & Barley Soup

  1. Melt butter in skillet - add mushrooms and cook until tender. about 10 mins. sprinkle the flour over the mush and stir about 1 min.

  2. Fry pancetta or bacon researve 1 T of the fat

  3. Add the onions, celery, & garlic to the pot. Mix with the pancetta cover and cook for about 10 mins until veggies are tender

  4. Stir in mushrooms, mix them thoroughly w/the other ingredients. Add the stock & barley. Bring to a boil. Reduce heat and simmer 40 mins until barley is tender. Garnish with parm.
