Mushroom soup with carrots, leeks and tofu

Recipe Ingredients for Mushroom Barley Soup

1 cup pearled barley
960 g chicken stock
1/2 cup leeks
128 g carrots
3 oz mushrooms
47 g lemon juice
455 g silken tofu
18 g olive oil
5 g butter
8 g salt
15 g seitan
25 g shallots

Recipe Directions for Mushroom Barley Soup

  1. in dutch oven, brown shallots and leeks with olive oil

  2. add mushrooms and sautee

  3. remove mushrooms, add barley, brown

  4. deglaze pot with stock

  5. add rest of stock and tofu, bring to boil

  6. [firm tofu cubes would work better than trying to cream silky tofu into the stock, silky seperates]

  7. cook barley covered for 25 min

  8. add mushrooms and carrots, cook until veggies are tender

  9. add salt, butter, lemon juice, rosemary, dill to taste
