Recipe Ingredients for mushroom barley soup

14 oz lite firm tofu
2/3 c barley
2 medium onions
2 c carrots
2 c celery
20 oz mushrooms
32 oz vegetable broth
12 c water
1 tsp garlic powder
1 tsp basil
1 tsp black pepper
1 tsp oregano
3 tbsp olive oil
3 tsp chicken soup mix

Recipe Directions for mushroom barley soup

  1. Chop the carrots, onions and celery

  2. Saute in olive oil until just tender

  3. Slice the mushrooms

  4. Add to other veggies and cook just to soften

  5. Put mushrooms and veggie mix into large pot and add vegetable broth and water and spices.

  6. Cube the tofu.

  7. Add to soup

  8. Bring to a boil

  9. Reduce to simmer and cook 2 hours.
