Recipe Ingredients for Mushroom Barley Soup

2 tbsp Butter
2 cloves garlic, minced
1/2 onion, diced
2 carrots, chopped
2 celery stalks, chopped
58 oz chicken broth
1 lb mushrooms, sliced
3/4 cups barley
1 tbsp dill
1/2 tsp salt
1/2 tsp pepper

Recipe Directions for Mushroom Barley Soup

  1. Melt butter in a large stockpot.

  2. Add garlic, onion, carrots and celery, saute until tender.

  3. Add broth, mushrooms, barley and seasonings. Bring to a boil, reduce heat, simmer 2 hours or until barley is soft.

  4. For a vegetarian variation use vegetable stock in place of chicken broth.
