1 onion
1 red pepper
2 cloves garlic
10 mushrooms
1/2 cup chickpeas
1 cup barley
6 cups vegetable broth

Recipe Directions for Mushroom Barley Soup

  1. Sautee onion and garlic in pot.

  2. Add red peppers.

  3. Add mushrooms and cook until they begin to sweat.

  4. Add pearl barley and chickpeas, add broth.

  5. Bring to a boil.

  6. Simmer, covered, for about twenty minutes.
