Recipe Ingredients for Mushroom Barley Risotto

1 cup, diced Mushrooms, Portabella
1 cup, chopped Onions
1 tbsp Extra Virgin Olive Oil
1 tsp, leaves Thyme, Dried
1 cup Pearled Barley
2 serving Beef Broth
1 Serving Sauce
3 tbsp Parmesan, Grated Cheese
3 tbsp Parsley

Recipe Directions for Mushroom Barley Risotto

Rinse barley overnight. In large pressure cooker heat oil. Saute onion until soft. Add broth. worcestershire sauce and drained barley. Pressure cook for 20 minutes. Cook uncovered over high heat to reduce and barley is tender.
