Recipe Ingredients for Mushroom Barley "Risotto"

3 tbsp olive oil
1 c onion, finely chopped
1 garlic clove, chopped
10 oz cremini mushrooms, sliced
1 tsp salt
1/2 tsp dried thyme
1/2 tsp fresh rosemary, minced
1 tbsp soy sauce
1/4 tsp black pepper
1/2 c white wine
1 c pearled barley
3 c water

Recipe Directions for Mushroom Barley "Risotto"

  1. Warm the olive oil in a saucepan on medium heat. Add the onions and garlic, cover, and cook for about 5 minutes. Stir in the mushrooms and salt, cover, and cook until the mushrooms start to give off liquid, about 5 minutes.

  2. Stir in the thyme, rosemary, soy sauce, pepper, wine, barley, and water, cover, and bring to a boil. Then lower the heat and simmer uncovered, stirring every 10 minutes or so, for 30 minutes or more, until the barley is tender and the texture creamy. Add water if needed during the cooking process.
