Recipe Ingredients for Mushroom-Barley Burger

1 tablespoon extra-virgin olive oil
2 cups onion, minced
1/2 pound mushrooms, minced
1 teaspoon salt
2 tablespoons garlic
2 tablespoons balsamic vinegar
3 cups cooked pearl barley
1/2 cup walnuts, minced
4 large eggs
1 cup mozzarella, part-skim, grated

Recipe Directions for Mushroom-Barley Burger

  1. Saute onion in olive oil.

  2. Add mushrooms and salt. Cook until liquid evaporates and mushrooms start to color.

  3. Add garlic; cook 1 minute.

  4. Remove from heat and stir in vinegar.

  5. In a large bowl, combine onion and mushroom mixture with the cooked barley and walnuts. Add eggs and mozzarella and stir.

  6. Add black pepper to taste and let sit 10 min at room temp or refrigerate overnight.

  7. Preheat oven to 400.

  8. Spray cookie sheet with non-stick spray.

  9. Use 1/2 cup measure to portion out burgers. Flatten out each mound.

  10. Bake 10 minutes on one side, flip, bake ten minutes more.

  11. Serve hot or warm.
