I make these all the time and it occurred to me that I hadn't posted the recipe. These are so good that I usually make 3 or 4 times the amount (we have a large household) and bake it in a 9x13 pan. That way I have leftovers. Enjoy! Could use to top a burger too.

Recipe Ingredients for Mushroom Au Gratin Bake

2 tablespoons butter
1 lb fresh mushrooms (I usually use half sliced and half whole)
1/3 cup light sour cream
1 tablespoon flour
1/4 cup chopped fresh parsley (or use a bit of dried)
1 cup mozzarella cheese (or use half of each swiss cheese or!)
1 salt and pepper

Recipe Directions for Mushroom Au Gratin Bake

  1. 1. Set oven to 400 degrees.

  2. 2. Grease a shallow baking dish.

  3. 3. In a frypan, saute the sliced mushrooms with butter over medium-high heat.

  4. 4. In a small bowl, blend together sour cream, salt, pepper and flour.

  5. 5. Add to the mushrooms in the pan.

  6. 6. Heat until JUST beginning to boil.

  7. 7. Transfer to a baking dish. Add chopped parsley and cheese.

  8. 8. Bake for about 10-15 minutes.
