Recipe Ingredients for Mushroom Asparagus Quisotto

2 tbsp butter
1 lb asparagus, chopped
2 cups mushrooms, chopped
1/2 cup onion, diced
1 tbsp fresh garlic, crushed
1 cup quinoa
2 cup low sodium chicken broth
1 pinch ground nutmeg
1/3 cup parmesan cheese, grated

Recipe Directions for Mushroom Asparagus Quisotto

  1. Saute onion, asparagus, mushrooms and garlic in butter for about 10 minutes, stirring frequently.

  2. Combine quinoa, broth and nutmeg in a medium saucepan and bring to a boil. Reduce to simmer, cover and cook until quinoa is completely tender, about 10 minutes. Turn off heat. Leave the covered saucepan on the burner for 6 minutes.

  3. Add the cooked quinoa to the asparagus and mushroom mixture. Add salt and pepper to taste. Stir in parmesan cheese.

  4. Serve immediately.
