Great side dish loaded with vitamins, made with mashed potatoes and pureed vegetables, broccoli and cheese. Maybe even the kids will eat it!

Recipe Ingredients for Mush

1 cup green beans, drained
1/2 lb sweet potato, cooked
5 oz carrots, cooked
1/2 lb potatoes, cooked and mashed
1/2 cup low fat milk
7 oz broccoli
3 oz cheddar cheese, shredded
1/2 tsp salt
1/2 tsp ground pepper
2 tsp olive oil
2 tbsp Brummel and brown

Recipe Directions for Mush

  1. Add canned (or cooked) green beans, sweet potato, carrots, salt pepper and olive oil, in a food processor and process until smooth.

  2. Stir into mashed cooked potatoes whipped with milk, I prefer the Yukon gold, mixing well, you can use a cake mixer or masher.

  3. Finely chop cooked broccoli add to potatoes with cheese. Reheat in oven, stove top or microwave before serving.

  4. You can add any seasoning or substitute the veggies with anything soft.

  5. Add butter calorie if you butter it, or top with gravy made from broth and cornstarch, or cream of soup. I serve this as a side to the CC recipe Smothered Pork Chops YUM YUM
