Recipe Ingredients for Muscling-Up Meatballs

1 slice whole wheat bread, crumbled
1/3 cup skim milk
1 pound extra lean ground beef
6 tbsp liquid egg white
1/4 cup parsley
2 tbsp parmesan cheese
2 tsp garlic salt
2 tsp onion powder
1/2 tsp salt

Recipe Directions for Muscling-Up Meatballs

  1. Preheat oven to 400. Lightly mist a medium baking sheet with olive oil spray. Set aside.

  2. In a mixing bowl, combine bread crumbs and milk. Let stand for 2-3 minutes, or until the milk softens the crumbs.

  3. Add beef, egg whites, parsley, cheese, garlic salt, onion powder, and salt. With clean hands or a fork, mix well.

  4. Divide the mixture into 18 equal parts. Roll each piece between your palms to shape into a ball. Place the meatballs, not touching, on the prepared baking sheet.

  5. Bake for 12 to 15 minutes, until no longer pink inside.

  6. Makes 18 meatballs.
