1 fl oz Lemon Juice
2 tbsp Olive Oil
1 serving Paprika Smoked
0.5 tsp Salt, Table
0.25 tsp Cloves, Ground
0.25 tsp Allspice, Ground
0.25 tsp Cinnamon, Ground
0.25 tsp Turmeric, Ground
0.25 tsp Nutmeg, Ground
3.5 unit (yield from 1 lb ready-to-cook chicken) Chicken, Meat Only, Roasted
4 large Onions
4 clove Garlic
0.13 cup Nuts Pine
0.25 cup Parsley
1 serving Ground Sumac
3 serving Balady 100% Whole Wheat Pita Bread

Recipe Directions for Musakhan (Heart Smart by Bonnie Stern)

  1. Remove the skin from the chicken and cut it into 8 to 10 pieces.

  2. Cut the pitas in half.

  3. Thinly slice the onions, finely chop the garlic, and chop the fresh parsley.

  4. Combine lemon juice and 1 tbsp oil. Stir in sumac, paprika, salt, cloves, allspice, cinnamon, turmeric, and nutmeg.

  5. Pat chicken dry and rub paste into chicken. Arrange chicken in a single layer on a baking sheet lined with parchment paper. Roast in a preheated 375F oven for 20 to 30 minutes, or until chicken is almost cooked.

  6. Meanwhile, heat remaining 1 tbsp oil in a large skillet on medium-high heat. Add onions and garlic and gook for 10 to 15 minutes, or until tender and brown. Add juices from chicken to onions. Season with salt and pepper.

  7. When chicken is ready, place pita breads in a single layer on baking sheets. Place half the onions (with their juices) on pitas. Top with chicken. Top with onions and pine nuts. Roast for 10 minutes longer.

  8. Sprinkle with chopped parsley or cilantro.
