Recipe Ingredients for Murphy's Irish Beef Stew

1/4 cup olive oil
1 1/2 pounds beef chuck
1/4 c flour
1 c onion
6 cloves garlic
4 c beef stock
2 c red wine
2 c beer
2 tbsp tomato paste
3 pounds potatoes
2 c carrots
1 tbsp worcestershire sauce
1 salt
1 pepper

Recipe Directions for Murphy's Irish Beef Stew

  1. Heat olive oil in large heavy pot over highheat. Salt the beef and dregge lightly in flour. When oil is hot, add a few pieces of the beef to the oil, being careful not to overcrowd the pot. Brown beef on all sides and remove from pan and place in a bowl. Continue until all the beef has been seared.

  2. Add onions and garlic to the same pot. Saute for 1 to 2 minutes, stirring constantly. Add the beef back tothe pot along with the herbs (1 tbsp each of fresh thyme, rosemary, and tarragon, minced), 2 bay leaves, beef stock, wine, Irish Stout and tomato paste. Bring to a boil and reduce heat to medium-low. Cover and simmer until meat is almost tender, about 1 hour. Add potato (peeled and cut into 1/2 inch pieces) and carrots (peeled and cut into 1/2 inch pieces) to the pot. Simmer uncovered for about 30-40 minutes, until vegetables are tender. Remove bay leaves and season with worcestershire sauce. salt and pepper to taste. Ladle into bowls and garnish with minced parsley.
