Recipe Ingredients for Mung Beans and Rice

1/8 cup mung beans
3/16 cup rice
1/4 tsp turmeric
1/4 tsp ginger, dried, powdered
1/4 tsp fennel, ground
1/4 tsp fenugreek seeds
1/4 tsp coriander, ground
1/4 tsp cumin, ground
2 cloves garlic, minced
1 tsp ginger, minced
1 pinch salt
2 1/2 tbsp sunflower oil
4 cups water

Recipe Directions for Mung Beans and Rice

  1. Rinse the mung beans and rice separately

  2. Heat oil in pan

  3. Add dry spices and begin to brown, about a minute

  4. Add minced garlic and ginger, brown another minute or two

  5. Add mung beans and stir or swirl every so often so spices don't burn, 3-5 minutes

  6. Add 2 cups of water and cook for about 20 minutes

  7. If water gets low, add more water and keep cooking until mung beans look like they are starting to soften

  8. Add rice, cook another 20 minutes or until beans and rice are cooked through

  9. Add more or less water depending on desired consistency
