Recipe Ingredients for Mung Bean Soup

1 tbsp Sunflower Oil, heated with a 1 pinch of asafoetida (hing)
1 g Bay Leaf, 1 whole bay leaves 1 tsp Coriander 1 tsp Cumin Seed 1/ tsp Pepper, Black, use 5 whole pepper corns 1 1/2 tsp Turmer
1/2 tsp Ginger, fresh minced/grated
50 g Mung Beans, whole green soaked overnight
200 ml water
1/2 tsp Garlic, 2 cloves minced sautéed 15g Butter - Without Salt, actually use clarified unsalted butter (ghee) 20g Onions, 1 med
1/2 g salt, to taste
1 tbsp Coriander Leaves, fresh copped

Recipe Directions for Mung Bean Soup

  1. Gently sauté ghee, onions and garlic until soft and set aside

  2. Heat oil and fry asafoetida for a few seconds, then on medium heat fry remaining ingredients (except fresh ginger) for about a minute until aromas released.

  3. Then add lentils and boiling water and fresh minced ginger. Bring to a boil and then simmer until soft. Add additional water to desired consistency.

  4. Take off heat and add cooked onions, garlic, and fresh coriander. Salt to taste, added last to prevent hardening lentils while cooking

  5. A good substitute for the evening meal . I double teh quanties to make 2 servings for lunch and dinner.
