Recipe Ingredients for Mung Bean Cake

1 1/2 cup Mung Beans, Mature Seeds
0.33 cup, packed Sugars, Brown
0.33 cup Sugars, Granulated
0.33 cup Lite Coconut Milk
1/3 cup Cornstarch
1 teaspoon vanilla
1 tsp Shortening

Recipe Directions for Mung Bean Cake

  1. Cook 12 oz yellow, hulled mung beans in a cup of water until mushy. Don't buy the green ones, they have hulls.

  2. Add water as needed, and cook over low heat. Use wooden spoon to smash and stir from the bottom.

  3. Cool beans. Blend by hand or in blender with:

  4. 1/3 cup cornstarch

  5. 2/3-1 cup of sugars

  6. 1/3 cup lite coconut milk

  7. 1 tsp vanilla

  8. Pour into shortening-greased cake pan or 2 pie tins.

  9. Bake @ 350 for about an hour.

  10. Serve at room temperature with or without topping of your choice.
