absolutely fabulous and not overly gingery.. super yummy. Rises ALOT so be careful how much you fill your cake tin or muffin trays... half full on the muffin trays is plenty!

Recipe Ingredients for mums ginger cake (from best recipes.com.au)

170 g butter
170 g sugar
225 g golden syrup
340 g self raising flour
1 T ginger
1 T cinnamon
2 tsp baking soda
2 eggs
235 ml milk
1 T vinegar

Recipe Directions for mums ginger cake (from best recipes.com.au)

  1. Melt butter, golden syrup and sugar together, pour into large bowl

  2. Add all other ingredients and mix

  3. grease well baking tin or use muffin papers sprayed with oil and then bake at 180 C for around 25mins (if in muffin tins) or till bounces back when lightly touched on top
