Recipe Ingredients for Mumbai Samosas

1 medium onion
4 garlic cloves
1 1/2 tablespoon fresh ginger
4 1/2 teaspoons curry powder
1 1/2 teaspoons mustard seeds
375 gram russet potatoes peeled
115 gram green beans
75 gram frozen peas
8 oz Phyllo dough
4 oz unsalted butter
1/2 teaspoon salt
1/2 teaspoon black pepper

Recipe Directions for Mumbai Samosas

  1. Finely chop onion; mince garlic.

  2. Grate ginger.

  3. Peel and finely dice potatoes.

  4. Cut green beans into 3/4 cm length.

  5. Fry the onions, garlic and grated ginger in a spray of cooking oil, then stir in curry and mustard seeds.

  6. Add the potatoes and green beans together with 400 ml of water. Cook for approximately 20 minutes or until vegetables are almost tender and liquid is evaporated. Add the peas during the last 5 minutes of cooking.

  7. Preheat oven to 400F.

  8. Melt the butter.

  9. Spread out Phyllo sheets. Brush sparingly and gently with the melted butter; cut into three strips. Put 2 Tablespoons of the mix on top of a strip and fold over itself to form a triangle. Continue folding down the length of the strip to make a samosa shape.

  10. Put on a non-stick baking sheet. Repeat with the rest of the pastry and filling.

  11. Bake for 10 to `2 minutes until golden brown.
