Recipe Ingredients for multigrain pasta with sweet potatoes and leeks

1 1/2 cups broccoli
2 leeks
3 cloves garlic
4 cups sweet potatoes
12 oz whole wheat pasta
4 tsp olive oil
1/4 cup fresh sage
3/4 cup parmesan
10 oz chicken breast
1/4 tsp nutmeg
1/2 tsp kosher salt
1/2 tsp pepper

Recipe Directions for multigrain pasta with sweet potatoes and leeks

  1. cook pasta (multigrain penne) according to the package directions, reserving 1/2 c cooking water.

  2. heat oil in skillet over medium heat. add the leeks (white & light parts, cut into half moons) and cook, stirring until they begin to soften, 4 mins. stir in the garlic (thinly sliced) and sage (chopped) and cook 2 min. add the sweet potato (about 1 lb cut into 1/2in pieces), 1/2 tsp salt, and 1/2 tsp pepper, and cook, covered, stirring twice, until just tender 6-8 min.

  3. stir in 1/2 C parmesan and the reserved cooking water and simmer, stirring, until the potatoes are fully tender, 2-4 min.

  4. add the cooked pasta and nutmeg and toss.

  5. divide among individual bowls and sprinkle with the remaining parmesan and 1/2 tsp pepper.
