I replaced the oil with apple sauce for this muffin recipe and it turned out lovely. Nutty, crunchy texture and just the right amount of sweetness.

Recipe Ingredients for Multigrain Muffins

1/4 cup white flour
1/2 cup cornmeal
1/2 cup quick-cooking oats
1/2 cup whole wheat flour
1/4 cup packed brown sugar
1/4 cup wheat bran
2 tsp baking powder
1/4 tsp salt
1 egg, slightly beaten
1 cup non-fat milk
1/4 cup apple sauce
1/4 cup walnuts, chopped
1/2 cup raisins

Recipe Directions for Multigrain Muffins

  1. Preheat oven to 375*

  2. In a bowl combine the first eight ingredients. In another bowl combine the egg, milk and apple sauce. Stir wet into dry just until moistened. Fold in nuts and raisins.

  3. Spray muffin cups with cooking spray. Fill 1/2 to 2/3 with batter. Bake for 15-18 minutes until toothpick inserted into the middle comes out clean. Cool for 5 minutes on rack then remove from pan to a wire rack.
