Multigrain Bread Recipe

Makes 12 servings



A wholesome loaf, very dense and crunchy. Would make a good crispy pizza crust, IMHO. Makes good croutons, and great breadcrumbs.

Recipe Ingredients for Multigrain Bread

3 c water
2 tbsp yeast
1/4 c molasses
4 cups whole wheat flour
1 tsp salt
2 cups rolled oats
1 cup rye flour
1/4 cup wheat germ
1/4 cup ground flaxseed

Recipe Directions for Multigrain Bread

  1. Dissolve the yeast in the water.

  2. Add the molasses and half of the whole wheat flour. Stir a couple hundred times to make a sponge.

  3. Let rest an hour or so.

  4. Add salt and stir in the remaining flours.

  5. Knead until smooth (10-15 minutes).

  6. Let rise until double.

  7. Punch down.

  8. Let rise until double.

  9. Punch down. Form into 2 loaves.

  10. Let rise and bake.

  11. I guess you bake at 375 for about 40 minutes? Book says 350 for one hour.
