A basic multi-grain muffin, jazzed up with cocoa, white chocolate, and walnuts. For variety, substitute oats for whole wheat flour.

Recipe Ingredients for Multi-Grain Chocolate White Chip Walnut Muffins

3/4 c. all purpose flour
1/2 c. yellow cornmeal
1/2 c. whole wheat flour
3 tbsp. flax seed meal
1/4 c. brown sugar, packed
1 tbsp. baking powder
1/2 tsp. salt
1 c. whole milk
1/4 c. butter, melted
1 egg
1/4 c. cocoa powder
1 c. chopped walnuts
1/2 c. Premier White Chips

Recipe Directions for Multi-Grain Chocolate White Chip Walnut Muffins

  1. Preheat oven to 375 degrees. Line muffin tins with paper baking cups.

  2. Mix together first 7 (dry) ingredients.

  3. In large bowl, beat milk, oil, and egg until blended. Stir into flour mixture until just moistened.

  4. Stir in white chips and morsels.

  5. Bake for 20-25 minutes. Cool 5 minutes before removing from pan.
